From the Rayman 3 HD files, it's known that there's also one unused demo level logo named "sk8". Ribshark said on his post that there's the fifth demo, but he doesn't have it. I have not fully played the demo yet, I will try to find any differences in comparison to previous one (that is also the reason why this demo is still not mentioned in the article). If such a demo was ever released to the public, it would be cool to find it. Actually only in the original E3 demo do the level names make sense - 'Bad Sauce' is Begoniax chasing you around her cauldron, and 'Dangerous Game' is the level in Razoff's mansion where he is hunting you (the 'game'). So far I do not know of any Rayman 3 Demo for the PC that has the levels of the original E3 Demo. The last two demos, even having vastly different content, use the same product code in the installer, so if you try to use the provided SETUP.EXE, you can only install one at a time, since a repeated call to the installer triggers 'Repair/Remove' fortunately, the installer is not required at all - it is enough to just copy all files and folders under "program files\Ubi Soft\Rayman3" into any directory on your PC and run it from there. Again, all levels in their final form or close to it. The TFC 2 level is still there, now called 'Dangerous Game'. The last one is dated completely removes the two levels from the beta demo, replacing them instead with TLS 3 ('Bad Sauce') and TLOTL 2 ('Highland Drifters'). The version dated keeps the same 2 levels, and adds a third one ('Bad Sauce' - TFC 2), also bringing the level design, graphics, voices and music close to the final version. There are differences in some of the files between the two versions, but I could spot no differences in gameplay, so I'm not sure these should count as separate demos. It includes 'Dangerous Game' (CF 3) and 'Special Invaders' (TTOTL 3) levels. The first two versions, dated -21 are the "Beta" demo with the earlier designs, different sounds and trailer. The simulator was released before developers got access to the hardware 3, it is basically an emulator which virtualizes the hardware of the emotion engine on a standard pc.
